Easy Peasy Shortbread



Today I thought I would do a little baking post. I absolutely love baking it's such a nice calming thing to do when I have a bit of spare time. One thing I really enjoy making is Shortbread. I love this recipe  because it's nice and simple, only four ingredients! 

You will need:


100g Cornflour
200g Plain Flour
200g Butter (I usually use anchor but shop didn't have any)
100g Caster Sugar


2 x baking trays with greaseproof paper
Mixing bowl
Scales
Electric mixer and/or wooden spoon
and a rolling pin (forgot about that when I took picture! )


First up preheat your oven to 160Âșc


Next cream the butter and sugar together, and try not to eat it (yummy)


Add in both kinds of flour, it will look a bit crumbly, this is when things get messy! Get your hands in there and give it a good knead until it all comes together.


I was a little ahead of myself with this picture it needed a little more working but after kneading it should look like this but a bit smoother.


The next step is to split your mixture into two. I then roll each of them into a ball. You could then go straight in with the rolling pin but I prefer to use my hands to shape it as much as I can.



When I get to about this stage I go in with the rolling pin to get it to about 1cm thick.


Then I pop them on the baking trays go round the edges with a fork, prick all over and lightly score the portions.

Now pop them in the oven for 30mins or until a golden brown in colour.




When they come out add a sprinkle of caster sugar to the top leave to cool and then separate the portions and enjoy!!! Oh and don't forget to pop it in a tartan tin :)
