So today I wanted to do a super cool post on pancake day with mouthwatering photos and a nice easy recipe.....Yeah that's not gonna happen!
I did make pancakes yesterday, but I cheated and used a batter mix. Today I wanted to make them from scratch because it really isn't a difficult recipe. This is where it started to go wrong! I forgot to buy milk, I don't tend to buy it very often because I prefer to use almond milk. Oh well not the end of the world, I just decided to give it a shot with almond milk.
As I was just making this for myself I needed:
50g plain flour
1 medium egg
150ml almond milk
and a pinch of salt
The next problem...my fricking scales are broken! I totally forgot they didn't work! So now I had to figure out what 50g was in cups! Oh My God! This was starting to be more trouble than it was worth!
Once I had gotten everything finally into the bowl and whisked up it looked ok. Seemed to be about the right consistency! Woohoo!
It seems to be the norm to use some sort of cooking oil in the pan but I always use butter, it works just the same.
Looking good!! I'm really bad at judging how much mixture to use so I put a little in and then fill in the gaps! haha!
Somehow I have managed to pull this off. It actually turned out not too bad. Pop some sugar and lemon juice on and ta da! Yummy pancakes. I don't think the almond milk even really affected the taste either. It certainly didn't make them worse.
